Ingredients:

  • 4 large ripe bananas
  • 1 stick butter softened to room temperature
  • ½ cup sugar
  • 1 egg
  • 1 cup all-purpose flour

  • 1 tsp vanilla
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt

Directions:

  1. Mash bananas in a large mixing bowl.
  2. Add butter, sugar, egg, and vanilla with a mixer or by hand until well combined.
  3. Add flour, peanut powder, baking soda, cinnamon, and salt and blend until the batter is smooth.
  4. Allow to sit for 15 minutes.
  5. Preheat oven to 425 degrees Fahrenheit.
  6. Grease the muffin tin or line the tin with muffin cups then grease the cups. Fill cups with batter filling almost to the top. The batter will fill 12 muffin wells.
  7. Bake for 7 minutes at 425 degrees, then without removing the muffins from the oven decrease the temperature to 375 degrees and bake for another 10 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove muffins from oven and allow to cool.

Pulling these muffins out of the oven I initially nervous to taste them, but quickly realized I had just created the perfect muffin for baby. These muffins are so light and fluffy and are not at all the consistency I am used to from any kind of banana baked goods. They are so easily broken up into pieces and almost melt in your mouth. While my kids are past the stages of being introduced to infant allergens, it kind of makes me want to buy more Lil Mixins Infant Peanut Powder just to make these more often.
